Jakarta. The founder of the World Gourmet Summit has said he believes organic produce will be the next big trend in Indonesia’s food and beverage business.
“There is a new respect for organic, artisanal, seasonal and sustainable produce and products,” Peter Knipp said in an interview with Jakarta Globe on Monday.
The food expert, who has advised the Pancious Pancake restaurant chain and the Ritz-Carlton, said several restaurants in Jakarta, such as Healthy Choice and Sedap Alami, have already started offering dishes based on organic ingredients.
“Nowadays, the demand is growing, because we also try to educate our customers as well,” said Nurhasanah, a marketing official at Healthy Choice, on Tuesday.
Healthy Choice restaurant opened in Jakarta in 2003. The restaurant also has two outlets that offer organic food and lifestyle products in the city.
Fresh and wholesome food from suppliers who are meticulous in scrutinizing the quality of their ingredients will find a growing market, according to Knipp. The Indonesian trade, hospitality and restaurant sector grew 5.93 percent last year, and it accounted for 14.3 percent of Indonesia’s economic activity.
“We have entered the fast-food society, so we need to be careful about preserving our culinary culture,” Knipp said, adding that his passion is the pursuit of excellence, regardless of the transient trends in the food and beverage industry.
The World Gourmet Summit, one of the most prestigious foodie gatherings in the world, will be held in Singapore from March 26 to April 5.
The summit will have more than 15 esteemed chefs and gastronomic personalities attending, including eight Michelin-starred chefs from Germany, France, Italy, Belgium and Spain.
This year, the summit chose “the classics” as a theme to exude elegance and timelessness. “For every World Gourmet Summit, what I most look forward to is allowing people in Singapore and around the world to experience the very best that there is to offer in food and wine.
“[Especially] amidst the incomparably stunning setting that is Singapore,” Knipp said.
